Spicy Tokyo Rub Avocado & Corn Salad

This salad is a great way to make a quick and easy salad full of protein with a spicy kick.

  • 1 ear of roasted corn or 1 cup frozen (thawed)
  • 2 medium avocados
  • 1 cup canned beans - black, garbanzo, or red (drained and rinsed)
  • Juice from 1/2 lime
  • 1 Tablespoon olive oil
  • 2 teaspoons Rub with Love Spicy Tokyo Rub (more if you like it spicier)


  1. Remove roasted corn from cob.
  2. Peel avocado, remove pit and chop into 1/2" dice.
  3. Mix corn, avocado and beans in bowl.
  4. Drizzle mixture with lime juice, olive oil and toss with Tokyo Rub.
